Colvin Run Mill Cornbread

Issue: August, 1986

1 1/2 cups sifted flour
2 tbsp. baking powder
1/4 cup sugar
1 tbsp. salt
3 cups yellow cornmeal
2 eggs, well beaten
1 1/2 cups undiluted evaporated milk
1 cup water
1/2 cup margarine, melted

Sift the first four ingredients. Stir in cornmeal. Combine last four ingredients and add to the first mixture. Stir only until dry ingredients are dampened. Pour into a greased 13 x 9 x 2 pan and bake in a pre-heated 420 degree oven for about 20 minutes. If you wish, sprinkle with granulated sugar before baking. Enjoy!

Corn meal ground fresh at Colvin Run Mill, an early 19th century operating grist mill, can be purchased at the General Store in Colvin Run Mill Park, 10017 Colvin Run Road, Great Falls, Virginia 22066. This historic site, administered by the Division of Historic Preservation, Fairfax County Park Authority, is open to the public daily except Tuesdays, from 11:00am to 5:00pm.

Whole wheat and buckwheat flour and grits, also ground in the mill, can be found in the General Store too, and tours of the mill and site are offered to the public ($2.00 for adults, $1.00 for children).
